Obviously English is a good course if you are asking for educational opportunities. Also creative writing. You need to try to become a published author if you are not already. If you have a field of expertise figure out what trade or other magazines publish this type of article. Also, branch out from where you are and do research. An example might be you are writing at work about computing security and then decide you want to get a certification in that field. You then write an article about your path to select a cert and pursue it. This would be marketed to a publication with that type of emphasis.
So it would be measureable - did you get published or not?
